Originating from the East of Algeria, more precisely from Constantine and its surroundings, Trida is a delicious culinary specialty. Rooted in Berber tradition, it tells the story of a people proud of their culture and craftsmanship. In the past, Berber women, skilled artisans, handcrafted these small square pastas from durum wheat semolina, harvested from their fields. With a practiced touch, they stretched the dough to incredible thinness, preserving its delicate structure. Passed down through generations, the recipe has evolved over time, absorbing influences from the diverse cultures that have shaped Algeria.
The preparation of Trida is a cherished tradition, demanding patience and precision. Each step, from kneading to cutting, is carried out with care to achieve a thin and delicate dough. Our Trida pasta is manufactured while ensuring to meticulously preserve the characteristic shape and texture that have made this specialty famous. They are then dried at very low temperature for an entire day and night, thus reproducing the artisanal tradition of homemade Algerian pasta, just as our grandmothers used to make.
A simplified Trida preparation
The Trida recipe comes in two main versions: red sauce and white sauce. In the red sauce version, the steamed pasta is paired with a spicy tomato sauce, various vegetables, and legumes such as chickpeas, along with several pieces of meat (chicken, veal, lamb, etc.). The whole is enhanced by the ingredients that simmer together and guarantee a generous and fragrant dish.
The white sauce, the original Constantine recipe, is made from slowly cooking vegetables and meat. This broth is poured over the pasta at each stage of cooking and during serving, for extra creaminess. Each family has its own favourite recipe and serves the dishes differently. Thus, what makes this dish so special is its texture and flavours, which are savoured on many family occasions. The dish is served in the centre of the table, often in a large traditional dish that preserves the heat.
